Giodà’s cipolle in agrodolce are made with Calabria’s renowned cipolle rosse di Tropea (Tropea red onions), which are known for their natural sweetness and enticing aroma. This versatile condiment consists of crisp slices of red onions prepared agrodolce—in a sweet-sour brine made with red wine vinegar and sugar—then marinated in extra virgin olive oil.

Grown along Calabria’s Tyrrhenian coast for over two millennia, Tropea red onions are among the sweetest and most delicious you can find in nature. Their distinctive taste is attributed to the region’s unique terroir and proximity to the coast. The onions are sown during the summer, transplanted in autumn, and harvested the following spring.
